Ingredients

For Marinating The Chicken:

  • 500 Gram Chicken, Cut Into Pieces
  • 1 Cup Yogurt
  • 1 Tablespoon Ginger-Garlic Paste
  • 1 Tablespoon Red Chili Powder
  • 1 Tablespoon Turmeric Powder
  • Salt To Taste

For The Rice

  • 2 Cups Basmati Rice, Soaked For 30 Minutes And Drained
  • 4 Cups Water
  • 2-3 Green Cardamom Pods
  • 1 Cinnamon Stick
  • 2-3 Cloves
  • Salt To Taste

For Assembling The Biryani

  • 2 Onions, Thinly Sliced
  • 2 Tomatoes, Chopped
  • 2 Green chilies, slit
  • ½ Cup Chopped Coriander Leaves (Cilantro)
  • ½ Cup Chopped Mint Leaves
  • ¼ Cup Fried Onions (Optional)
  • ¼ Cup Ghee Or Vegetable Oil
  • Saffron strands soaked in warm milk (optional, for coloring)
  • Fried cashew nuts and raisins for garnish (optional)

Whole Spices (For Tempering):

  • 1 Cinnamon Stick
  • 3-4 Green Cardamom Pods
  • 3-4 Cloves
  • 1 Bay Leaf

Biryani Masala (Ground Spices):

  • 1 Teaspoon Cumin Seeds
  • 1 Teaspoon Coriander Seeds
  • 1 Teaspoon Fennel Seeds
  • 1 Teaspoon Black Peppercorns
  • ½ Teaspoon Cloves
  • ½ Teaspoon Cardamom Seeds
  • 2-3 Dried Red Chilies
  • 1 Inch Piece Of Ginger
  • 6-8 Garlic Cloves

Instructions

  • Marinate the chicken: In a large bowl, mix yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt. Add chicken pieces to the marinade, mix well, cover, and let it marinate in the refrigerator for at least 1 hour, preferably longer.
  • Cook the rice: In a large pot, bring water to a boil. Add the soaked and drained rice along with whole spices (cardamom, cinnamon, cloves), and salt. Cook until the rice is 70-80% done. Drain the rice and set aside.
  • Prepare the biryani masala: Grind all the ingredients listed under "Biryani Masala" into a fine powder using a spice grinder or mortar and pestle.
  • Heat ghee or oil in a large pan or Dutch oven. Add the sliced onions and fry until golden brown. Remove half of the fried onions and set aside for garnish.
  • Add the chopped tomatoes, green chilies, half of the chopped coriander leaves, half of the chopped mint leaves, and biryani masala to the remaining onions in the pan. Cook until the tomatoes are soft and oil separates.
  • Add marinated chicken pieces to the pan and cook until the chicken is partially cooked and the masala coats the chicken well.
  • Layering the biryani: In the same pan, spread half of the partially cooked rice evenly over the chicken masala. Sprinkle the remaining chopped coriander leaves, mint leaves, and fried onions over the rice. Drizzle saffron milk over this layer if using.
  • Add the remaining rice over the first layer and spread it evenly. Again, drizzle saffron milk over this layer if using.
  • Cover the pan tightly with a lid or aluminum foil to seal the steam. Cook on low heat for about 20-25 minutes until the chicken is fully cooked and the rice is tender.
  • Once done, gently mix the layers of rice and chicken. Garnish with fried cashews, raisins, and the remaining fried onions.
  • Serve hot with raita (yogurt sauce) or salan (spicy gravy) and enjoy your delicious homemade chicken biryani!

Notes

You can adjust the spice levels according to your taste preferences. Additionally, you can also add a layer of boiled eggs along with rice for added flavor.
