Indian Chicken Curry Recipe

Ingredients

  • 2 lbs chicken thighs boneless and skinless, cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • 1 large onion finely chopped
  • 4 cloves garlic minced
  • 1- inch piece ginger minced
  • 2 tomatoes finely chopped
  • 1 cup coconut milk
  • 1 cup chicken broth
  • 2 tbsp curry powder
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • ½ tsp chili powder adjust to taste
  • Salt to taste
  • Fresh cilantro chopped (for garnish)
  • Cooked rice or naan for serving

Instructions

Preparation:

  • In a large pot or Dutch oven, heat the vegetable oil over medium heat.
  • Add the chopped onions and sauté until they are golden brown.
  • Add the minced garlic and ginger, and cook for another 2 minutes until fragrant.

Cooking the Chicken:

  • Add the chicken pieces to the pot and cook until they are lightly browned on all sides.
  • Stir in the curry powder, turmeric, cumin, coriander, garam masala, and chili powder. Cook for 2-3 minutes to toast the spices.

Simmering:

  • Add the chopped tomatoes to the pot and cook until they break down and form a thick paste.
  • Pour in the coconut milk and chicken broth, stirring well to combine.
  • Bring the mixture to a boil, then reduce the heat to low and let it simmer for 25-30 minutes, or until the chicken is fully cooked and tender. Stir occasionally to prevent sticking.

Finishing Touches:

  • Season the curry with salt to taste.
  • Garnish with fresh cilantro.
