Green Rice Recipe

Green Rice, or Arroz Verde, is a vibrant and flavorful dish perfect for adding a pop of color and taste to your meal. Infused with fresh herbs and a hint of lime, this rice pairs wonderfully with grilled meats, roasted vegetables, or can be enjoyed as a standalone dish. It’s a quick and easy recipe that brings a touch of Mexican cuisine to your table.

Ingredients

  • 1 cup long-grain white rice
  • 2 cups chicken or vegetable broth
  • 1 cup fresh spinach leaves
  • ½ cup fresh cilantro leaves
  • ¼ cup fresh parsley leaves
  • ¼ cup green onions chopped
  • 1 jalapeño pepper seeded and chopped (optional for heat)
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

Prepare the Herb Blend:

  • In a blender or food processor, combine spinach, cilantro, parsley, green onions, jalapeño (if using), garlic, and lime juice. Blend until smooth. Set aside.

Cook the Rice:

  • In a medium saucepan, heat the olive oil over medium heat. Add the rice and cook, stirring frequently, until the rice turns golden brown, about 5-7 minutes.

Combine and Cook:

  • Pour the herb blend over the toasted rice, stirring to combine. Add the broth, season with salt and pepper, and bring to a boil.

Simmer:

  • Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 18-20 minutes, or until the rice is tender and the liquid is absorbed.

Fluff and Serve:

  • Remove the saucepan from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
