Ingredients
- 1 cup long-grain white rice
- 2 cups chicken or vegetable broth
- 1 cup fresh spinach leaves
- ½ cup fresh cilantro leaves
- ¼ cup fresh parsley leaves
- ¼ cup green onions chopped
- 1 jalapeño pepper seeded and chopped (optional for heat)
- 2 cloves garlic minced
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
Prepare the Herb Blend:
- In a blender or food processor, combine spinach, cilantro, parsley, green onions, jalapeño (if using), garlic, and lime juice. Blend until smooth. Set aside.
Cook the Rice:
- In a medium saucepan, heat the olive oil over medium heat. Add the rice and cook, stirring frequently, until the rice turns golden brown, about 5-7 minutes.
Combine and Cook:
- Pour the herb blend over the toasted rice, stirring to combine. Add the broth, season with salt and pepper, and bring to a boil.
Simmer:
- Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 18-20 minutes, or until the rice is tender and the liquid is absorbed.
Fluff and Serve:
- Remove the saucepan from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
