Indian Chicken Curry Recipe

Ingredients
- 2 lbs chicken thighs boneless and skinless, cut into bite-sized pieces
- 2 tbsp vegetable oil
- 1 large onion finely chopped
- 4 cloves garlic minced
- 1- inch piece ginger minced
- 2 tomatoes finely chopped
- 1 cup coconut milk
- 1 cup chicken broth
- 2 tbsp curry powder
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp garam masala
- ½ tsp chili powder adjust to taste
- Salt to taste
- Fresh cilantro chopped (for garnish)
- Cooked rice or naan for serving
Instructions
Preparation:
- In a large pot or Dutch oven, heat the vegetable oil over medium heat.
- Add the chopped onions and sauté until they are golden brown.
- Add the minced garlic and ginger, and cook for another 2 minutes until fragrant.
Cooking the Chicken:
- Add the chicken pieces to the pot and cook until they are lightly browned on all sides.
- Stir in the curry powder, turmeric, cumin, coriander, garam masala, and chili powder. Cook for 2-3 minutes to toast the spices.
Simmering:
- Add the chopped tomatoes to the pot and cook until they break down and form a thick paste.
- Pour in the coconut milk and chicken broth, stirring well to combine.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 25-30 minutes, or until the chicken is fully cooked and tender. Stir occasionally to prevent sticking.

- Season the curry with salt to taste.
- Garnish with fresh cilantro.
