Ingredients
- 1 lb 450g dried split peas, rinsed
- 1 medium onion diced
- 2 carrots peeled and diced
- 2 celery stalks diced
- 3 cloves garlic minced
- 1 ham hock or 1 cup diced smoked ham optional for vegetarian/vegan omit
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 4 cups 950ml vegetable broth or water
- 2 cups 480ml water
- Salt and pepper to taste
- 1 tablespoon olive oil optional
- Fresh parsley for garnish optional
Instructions
Prepare the Ingredients
- Rinse the split peas under cold water and set aside.
- Dice the onion, carrots, celery, and garlic. If using ham, dice or prepare the ham hock.
