- 1 lb 450g Italian sausage links (mild or spicy)
- 1 tablespoon olive oil
- 2 large bell peppers red, yellow, or green, sliced
- 1 large onion sliced
- 3 cloves garlic minced
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup chicken broth or white wine optional
- Fresh parsley chopped (for garnish)
- Grated Parmesan cheese optional, for serving

Prep the Ingredients
- Begin by preparing your ingredients. Slice the bell peppers and onion into strips. Mince the garlic and set everything aside.
Cook the Sausage
- Heat the olive oil in a large skillet over medium heat. Add the Italian sausage links and cook until browned on all sides, about 5-7 minutes. Once browned, remove the sausages from the skillet and set them aside on a plate.
Sauté the Vegetables
- In the same skillet, add the sliced bell peppers and onions. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are softened. Add the minced garlic, dried oregano, dried basil, salt, and black pepper. Cook for an additional 1-2 minutes until the garlic is fragrant.
Combine the Ingredients
- Slice the browned sausages into 1-inch pieces and return them to the skillet with the peppers and onions. If desired, add 1/4 cup of chicken broth or white wine to the skillet. Stir to combine all the ingredients, cover, and let the mixture simmer on low heat for 10-15 minutes, allowing the flavors to meld together.
Serve
- Once the sausages are fully cooked and the vegetables are tender, remove the skillet from the heat. Garnish with freshly chopped parsley and, if desired, sprinkle with grated Parmesan cheese. Serve hot with crusty bread, over pasta, or in a sandwich roll.
