Ingredients
- 1 ½ lbs beef sirloin or flank steak, thinly sliced 680g
- 2 large bell peppers red, green, or yellow, sliced into strips
- 1 medium onion sliced
- 3 cloves garlic minced
- 1 cup 240ml beef broth
- ⅓ cup 80ml soy sauce
- 2 tbsp brown sugar
- 1 tbsp cornstarch
- 1 tbsp water
- 1 tsp ground ginger
- 1 tsp black pepper
- 2 tbsp vegetable oil
- Cooked rice or noodles for serving
- Optional: Sesame seeds and chopped green onions for garnish
Instructions
Prepare the Beef:
- Heat the vegetable oil in a large skillet over medium-high heat. Add the sliced beef and cook until browned on all sides. This step helps to lock in the flavor of the meat. Once browned, transfer the beef to your slow cooker.
Add the Vegetables:
- Place the sliced bell peppers, onions, and minced garlic on top of the beef in the slow cooker.
Make the Sauce:
- In a mixing bowl, combine the beef broth, soy sauce, brown sugar, ground ginger, and black pepper. Pour this mixture over the beef and vegetables in the slow cooker.
Cook:
- Cover the slow cooker with its lid and cook on low for 4-6 hours, or on high for 2-3 hours, until the beef is tender and the vegetables are cooked.
Thicken the Sauce:
- About 30 minutes before serving, mix the cornstarch with water to create a slurry. Stir this mixture into the slow cooker to thicken the sauce. Continue cooking for the remaining time.
Serve:
- Once done, serve the pepper steak over cooked rice or noodles. Garnish with sesame seeds and chopped green onions if desired.
