Warm Berry Compote

Instructions

Prepare the Berries:

  • If using fresh berries, wash them thoroughly. If using frozen berries, there's no need to thaw them beforehand.

Cook the Berries:

  • In a medium saucepan, combine the berries, sugar, lemon juice, lemon zest (if using), vanilla extract, and water. Stir to combine.

Simmer the Compote:

  • Place the saucepan over medium heat and bring the mixture to a gentle simmer. Stir occasionally to ensure the sugar dissolves and the berries soften. This should take about 5-7 minutes.

Optional Thickening:

  • If you prefer a thicker compote, dissolve the cornstarch in 1 tablespoon of water in a small bowl. Add this slurry to the berry mixture and stir well. Continue to cook for an additional 2-3 minutes, or until the compote thickens to your desired consistency.

Serve:

  • Remove the compote from heat and allow it to cool slightly. Serve warm over pancakes, waffles, ice cream, yogurt, or even as a filling for crepes. Store any leftovers in an airtight container in the refrigerator for up to a week.
