Delicious Homemade Veggie Burgers

These homemade veggie burgers are a delicious and nutritious alternative to traditional meat burgers. Packed with protein, fiber, and essential nutrients from black beans, quinoa, and a variety of vegetables and spices, they make a satisfying and flavorful meal.

Ingredients

  • 1 can 15 oz of black beans, drained and rinsed
  • 1 cup cooked quinoa
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 carrot grated
  • ½ red bell pepper finely chopped
  • ½ cup breadcrumbs
  • ¼ cup chopped fresh cilantro or parsley
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon chili powder adjust to taste
  • Salt and pepper to taste
  • 1 tablespoon olive oil for cooking
  • Burger buns
  • Toppings of your choice: lettuce tomato, avocado, sliced onion, cheese, etc.

Instructions

  • In a large mixing bowl, mash the black beans with a fork or potato masher until they are mostly smooth, with some texture remaining.
  • Add cooked quinoa, chopped onion, minced garlic, grated carrot, chopped bell pepper, breadcrumbs, cilantro or parsley, ground cumin, paprika, chili powder, salt, and pepper to the bowl with the mashed black beans. Mix until well combined. The mixture should hold together when pressed, but not be too wet. If it's too dry, add a little water or olive oil; if it's too wet, add more breadcrumbs.
  • Divide the mixture into equal portions and shape each portion into a patty using your hands. Make sure the patties are compact and hold their shape well.
  • Heat olive oil in a skillet over medium heat. Once the oil is hot, add the veggie burger patties to the skillet (you may need to cook them in batches depending on the size of your skillet). Cook for 4-5 minutes on each side, or until golden brown and heated through.
  • While the veggie burgers are cooking, prepare your burger buns and toppings.
  • Once the veggie burgers are cooked, remove them from the skillet and let them rest for a few minutes.
  • Assemble your veggie burgers by placing each patty on a bun and adding your desired toppings.
  • Serve immediately and enjoy your homemade veggie burgers!
