Ingredients
- 4 medium zucchinis sliced
- 2 tablespoons olive oil
- 1 medium onion finely chopped
- 2 cloves garlic minced
- 1 cup grated cheddar cheese
- 1 cup grated mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- ½ cup heavy cream
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- 1 cup breadcrumbs
- 2 tablespoons chopped fresh parsley optional, for garnish
Instructions
Preheat the Oven:
- Preheat your oven to 375°F (190°C).
Prepare the Zucchini:
- Slice the zucchinis into thin rounds. Set aside.
Sauté Vegetables:
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.
Make the Cheese Sauce:
- In a medium saucepan, melt the butter over medium heat.
- Whisk in the flour and cook for about 1-2 minutes to form a roux.
- Gradually whisk in the milk and heavy cream until the mixture is smooth.
- Cook, stirring constantly, until the sauce thickens, about 5 minutes.
- Remove from heat and stir in the grated cheddar, mozzarella, and Parmesan cheeses until melted and smooth.
- Season with salt, black pepper, dried oregano, and dried thyme.
Assemble the Casserole:
- In a large mixing bowl, combine the sautéed onions and garlic with the sliced zucchini.
- Pour the cheese sauce over the zucchini mixture and gently toss to coat.
- Transfer the mixture to a greased 9x13 inch baking dish.
Add Topping:
- In a small bowl, mix the breadcrumbs with a bit of olive oil or melted butter. Sprinkle the breadcrumb mixture evenly over the casserole.
Bake:
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.
