Watergate Salad Recipe

Ingredients

  • 1 package 3.4 oz instant pistachio pudding mix
  • 1 can 20 oz crushed pineapple in juice, undrained
  • 1 cup mini marshmallows
  • ½ cup chopped walnuts or pecans
  • 1 container 8 oz whipped topping (Cool Whip), thawed
  • ½ cup sweetened shredded coconut optional
  • Maraschino cherries for garnish optional

Instructions

Mix the Pudding and Pineapple:

  • In a large mixing bowl, combine the instant pistachio pudding mix with the undrained crushed pineapple. Stir until the pudding mix is fully dissolved and the mixture is smooth.

Add the Marshmallows and Nuts:

  • Fold in the mini marshmallows and chopped walnuts (or pecans) into the pudding mixture. If using sweetened shredded coconut, add it at this stage as well.

Fold in the Whipped Topping:

  • Gently fold in the thawed whipped topping until the mixture is light, fluffy, and well combined. Be careful not to overmix, as this can cause the whipped topping to deflate.

Chill:

  • Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together and the salad to thicken.

Serve:

  • Before serving, give the salad a quick stir. Transfer to a serving bowl or dish and garnish with maraschino cherries if desired. Serve chilled.
