Preheat Oven:

  • Preheat your oven to 400°F (200°C).

Prepare Sweet Potatoes:

  • Wash the sweet potatoes thoroughly, pierce them with a fork, and place them on a baking sheet. Bake for 45-50 minutes until they are tender and fully cooked.

Make the Filling:

  • Once the sweet potatoes are cool enough to handle, peel off the skins and place the flesh in a blender or food processor. Add the coconut milk, maple syrup, brown sugar, cornstarch, vanilla extract, cinnamon, nutmeg, ginger, cloves, and salt. Blend until the mixture is smooth and creamy.

Prepare the Crust:

  • If you're using a pre-made vegan pie crust, place it in your 9-inch pie dish. If you prefer a homemade crust, prepare and roll it out according to your recipe. Pour the sweet potato mixture into the crust, spreading it evenly with a spatula.

Bake the Pie:

  • Reduce the oven temperature to 350°F (175°C). Cover the edges of the pie crust with aluminum foil to prevent over-browning. Bake the pie for 45-50 minutes until the filling is set and slightly browned on top.

Cool and Serve:
